Confession: sometimes I can go a little crazy in the produce isle. When I am grocery shopping, I really want to buy a lot of healthy stuff so that way I will actually eat a lot of healthy stuff. There can be one glaring problem with this; I sometimes overestimate how much fresh produce I can actually consume before it goes badly.
If you are like me, then you particularly have this problem with avocados and bananas: avocados because they only have like a one-day frame where they are enjoyable to eat; and bananas because I only like to eat them before they get too ripe. If there is even one brown speckle on a banana, I know it is too ripe for me to enjoy it.
While I am currently searching for a solution for over-ripe avocado, I have found one for over-ripe bananas. Make chocolate chip banana bread muffins!
These were actually super easy. I used this Banana Bread Muffins recipe - only I used 2 bananas instead of three and added a cup of chocolate chips. I never said these were going to be super healthy, but they are delicious and made me feel better - I didn't waste any bananas!
