This is one of my new favorite recipes. I only say new because we just started making it on a weekly basis. It is so good, so easy, and relatively healthy, especially if you don't add any cheese.
1 cup of rice - prepare separately. We use fast cooking brown rice from Trader Joe's.
1 pound of ground turkey meat mixed with 1 packet of taco seasoning - cook together and follow the instructions on the packet.
1 tomato - diced
1 avocado - sliced
Mix all of it together to create what we have now dubbed a rice bowl! We'll top it of with some cheese too... because, I mean, cheese is delicious! I also need to clarify that when I say "we" in this post, I mostly mean Andy, since he is usually the cook in this household. He's just so much better at it than I am.
