Apparently, cereal is super terrible for you. Discovering this fact was a bit of a blow to be honest, as it was a staple of my diet and definitely a go-to-source for breakfast foods. While I am all about moderation and think that a little bit of cereal now and then is probably totally fine (especially since I really, really love Rice Chex), I've been trying to eat better breakfasts for the past couple of months. There is one, though, that has become an all-time favorite: Avocado and Egg Toast!
I do not claim to be the creative genius behind this recipe. I actually first learned of this recipe on a few different Instagram accounts so I can only guess as to who the actually source is for this amazing recipe. It's simple, delicious, and healthy; a true triple threat if there ever was one.
Take a piece of bread and lightly toast it. Once toasted, spread 1/2 an avocado on the piece of bread. Top the avocado toast with one fried egg and then add a light sprinkling of cheese. That's it! And it is so good! It also may not look like much - some of you are probably thinking that this will maybe keep you full for about an hour, max. However, because the egg is so high in protein and the avocado is so high in fat (the good kind), it's actually incredibly filling.
